Adjust Servings:
150 grams sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon kosher salt
2 teaspoons lemon zest
150 grams olive oil
110 grams buttermilk
1 eggs
165 grams cake flour

Preheat oven to 350F

Whisk sugar, baking soda and baking powder for two minutes.

Add lemon zest, olive oil, buttermilk and egg. Mix thoroughly.

Sift flour in and mix gently.

Coat 9 inch round pan with olive oil and cover with parchment. Pour batter into pan.

Bake for 30-35 minutes.
